Oyakodon (親子丼) – Japanese Chicken & Egg Rice Bowl

Ingredients (1 Serving):

  • ½ cup dashi (or ½ tsp dashi powder + water)
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sugar
  • ½ small onion, sliced

Instructions:

1️⃣  Prepare the broth: 

In a small pan, mix dashi, soy sauce, mirin, and sugar. Bring to a simmer over medium heat.

2️⃣ Cook the chicken: 

Add sliced onions and chicken thigh to the simmering broth. Cook for about 5 minutes, or until the chicken is fully cooked.

3️⃣  Add the egg:

Slowly pour the beaten egg over the chicken. Cover the pan with a lid and cook for 30 seconds to 1 minute, or until the egg is slightly set but still soft.

4️⃣ Serve & enjoy

Slide the cooked chicken and egg mixture over a bowl of hot rice. Garnish with fresh green onions and enjoy this comforting Japanese classic!
